You can have Case Sensitive HFS+ (called HSFX) but not at install time on
OS X client (OS X server can).  The way I always do it is to boot the other
machine in target mode attached through firewire to another mac then format
it case-sensitive from the remote machine.

I've been using HFSX on my mac with great success.
